Sliced Center Pork Loin with Green Beans Over Brown Rice

 INGREDIENTS:
12 oz. center cut pork line sliced in one inch strips
2 cans fat free cream of chicken soup (mushroom is good too)
1 16oz package frozen green beans
2 cups brown rice

SLOW COOKER DIRECTIONS:
Add pork loin and chicken soup to slow cooker. Add a can each of water. Cook on low for 6hrs.  Add green beans the last 30 minutes and switch to high. Serve over rice.

STOVETOP DIRECTIONS:
It a large nonstick skillet brown the pork. You do not need oil for this step. Once the pork is cooked add the cans of soup. Add water to thin the mixture. Cook on high heat for 10 minutes or until it thickens. Add green beans and cook for another 5 minutes. Serve over rice.

SHORTCUT TO COOKING BROWN RICE WITHOUT MEASURING:
In a microwave safe bowl add your rice with the amount depending on servings. Poor water one inch over the level of the rice. Cover with a lid and microwave on high for 15-20 minutes. Fluff with fork and it's ready to serve.

Tuna & Rice


Tuna and rice is my mom's recipe. My grandmother used to make this with salmon and my mom served us tuna as it was more appealing to kids. Over the years this has become my family's comfort food. My two older brothers still request this dish when they visit my parents. It's a simple dish that is filling and filled with memories.

Serves 4-6

INGREDIENTS:


2 cans of white albacore tuna in oil (you can sub in spring water, but it has less flavor)
5 strips of bacon (I use turkey bacon, but real bacon is fabulous)
1/4 cup apple cider vinegar
2 medium diced tomatoes
1/4 cup diced yellow or green onion
2 cups of rice (I prefer brown - instant is fine)

DIRECTIONS:

Prep & Total Cook Time 30 minutes

Cook rice. The time will differ if you're using instant. Have the rice ready to go so everything is waiting to be assembled.

Prep your tomatoes and onions. They can be diced to your preference. Add them to a bowl and let them marinate in the apple cider vinegar. Five minutes is all that is needed, but they can stay marinating for 30 minutes.

Chop bacon to small pieces and cook in a nonstick sauce pan. Make sure you have a large sauce pan to work with because you're going to toss the rice in later.

Once bacon is cooked add rice and saute for five minutes. The rice will absorb any excess oil rendered from the bacon and will be a flavorful. You can add salt and pepper to the rice at this point, but you may only use pepper as the bacon is salty.


THE ASSEMBLY PROCESS

Add 1/4 cup of rice and bacon mixture to your plate or bowl. Top with two tablespoons of tuna. Add two tablespoons of tomatoes onions and serve.

Baked Ziti






Tonight we had baked ziti for dinner. If you have 20-25 minutes then you can whip this together quickly for a weeknight meal that will satisfy your family.

It's ok to make baked ziti with jarred marinara. Go ahead and pick your favorite. You want to know how to make it taste authentic? Add a can of *fire roasted tomatoes* with your mixture. You will not believe the difference that makes. You would think the sauce has simmered all day.  

This dish is an assembly process and you can cater it to your tastes. I like to add frozen meatballs diced up and cottage cheese to give it the fake lasagna flavor. Most times I use my precooked ground turkey if the family is craving meat. This can easily be a meatless dinner item.

   

Chicken Picante (With Thanksgiving Turkey)

This is usually called Chicken Picante, but we're using leftover turkey so it's Turkey Picante. It's super easy to make and it's been handed down to me from my mom.
I heat up the leftover turkey in a skillet. Toss in your favorite jarred salsa and mixed veggies. Add salt and pepper and that's it. I serve over rice which is super convenient to stop at my local Chinese takeout and grab a pint for less than $2. Dinner is ready in 15 minutes!

Turkey Chili (Leftover Thanksgiving)

I use regular ground and Thanksgiving turkey for this leftover chili. It has red and black beans, diced tomatoes, and I top it off with chopped avocado and sour cream.

Turkey Pot Pie (Thanksgiving Leftovers)

What do you do with all of those leftovers? You make pie.
Ingredients:
6 oz. Turkey
1 can cream of chicken or mushroom soup
16 oz. mixed veggies
1 can crescent rolls
Leftover gravy to mix with soup

Mix soup, gravy, turkey, and veggies and pour into baking dish.  Cover with crescent rolls (or biscuits).  Bake for 25 minutes on 350.


Worried about making the turkey? Treat it like a big chicken. I season my turkey the same as I would a whole chicken.  I cook it on 400 for the first 30 minutes and then drop it down to 300 for the rest of the cook time.
