Tuna and rice is my mom's recipe. My grandmother used to make this with salmon and my mom served us tuna as it was more appealing to kids. Over the years this has become my family's comfort food. My two older brothers still request this dish when they visit my parents. It's a simple dish that is filling and filled with memories.
Serves 4-6
INGREDIENTS:
2 cans of white albacore tuna in oil (you can sub in spring water, but it has less flavor)
5 strips of bacon (I use turkey bacon, but real bacon is fabulous)
1/4 cup apple cider vinegar
2 medium diced tomatoes
1/4 cup diced yellow or green onion
2 cups of rice (I prefer brown - instant is fine)
DIRECTIONS:
Prep & Total Cook Time 30 minutes
Cook rice. The time will differ if you're using instant. Have the rice ready to go so everything is waiting to be assembled.
Prep your tomatoes and onions. They can be diced to your preference. Add them to a bowl and let them marinate in the apple cider vinegar. Five minutes is all that is needed, but they can stay marinating for 30 minutes.
Chop bacon to small pieces and cook in a nonstick sauce pan. Make sure you have a large sauce pan to work with because you're going to toss the rice in later.
Once bacon is cooked add rice and saute for five minutes. The rice will absorb any excess oil rendered from the bacon and will be a flavorful. You can add salt and pepper to the rice at this point, but you may only use pepper as the bacon is salty.
THE ASSEMBLY PROCESS
Add 1/4 cup of rice and bacon mixture to your plate or bowl. Top with two tablespoons of tuna. Add two tablespoons of tomatoes onions and serve.
